Chewy Chocolate Cookies



2cups rolled oats

½ cup cacao powder

1cup almond meal

2tbsp flaxseed meal whisked with 6tbsp water (to make a gel consistency)

1 egg

4-5tbsp coconut nectar

2tbsp tahini paste

3tbsp melted coconut oil



  • Pre-heat oven to 180 degrees celcius

  • Grab a mixing bowl and place all dry ingredients in (oats, almond meal, cacao) and mix together until well combined.

  • In a small bowl, whisk your flaxseed meal + water to form gel consistency, add melted coconut oil & liquid sweetener to this and whisk again until mixed together well.

  • Add your wet ingredients to the dry ingredients and mix all together until ingredients are mixed together well. May need to use your hands to really mix it all together.

  • Line 1 large or 2 small baking trays with baking paper. Scoop desired amounts of cookie mixture out and roll into balls, place each ball onto your baking tray/s.

  • Once all your mixture has been rolled into balls. Use a large spoon or spatula to flatten your balls into cookies.

  • Bake in oven for 30 mins until edges have darkened and hardened (crunchy). Centre of the cookies should still be slightly soft.


Definately taste test one when it's warm from the oven! Delicious.
