Turmeric Latte Banana Bread

 

Gluten-free, Dairy-free, Refined sugar-free, Vegan option

 

Ingredients

5 large, ripe bananas (Let bananas ripen until black spots are everywhere on the skin= sweeter & easier to digest)

4 eggs 

*Vegan egg option: 4tbsp chia seed meal or flaxseed meal whisked with 12tbsp water

1 cup almond meal

½ cup coconut flour or other GF flour of choice

¼ cup flaxseed meal

¼ whole flaxseeds

¼ cup coconut oil, melted

1tsp cinnamon

2tbsp Naked Paleo turmeric latte powder

*Alternatively you can add: 1tbsp turmeric powder, 2tsp vanilla powder, 1tsp nutmeg, a couple of twists of cracked black pepper. *Black pepper enhances the bioavailability of the active constituents of turmeric, enabling your body to utilise the benefits a lot easier :) 

 

Method

  • Pre-heat oven to 180 degrees celcius. Line a medium square or round cake tin with baking paper. Or make it into a loaf by lining a loaf tin with baking paper.

  • Add 4 peeled bananas and all eggs to a blender/mixer and blend until smooth. While machine is still running, add coconut oil and blend for a couple of seconds.

  • In a mixing bowl, add all dry ingredients and stir together until well combined. Add dry ingredients into blender and blend wet and dry ingredients until wet dough is formed.

  • Scrape dough from mixer into cake tin you have prepared and smooth down the top with a spatula.

  • Grab your last peeled banana and slice lengthways into quarters (as seen in picture). Arrange the 4 banana slices on the top of the loaf and press down gently to allow bananas to sink into dough.

  • Place baking tin into oven and bake for 30 mins. If you are using a loaf tin, you may need another 10 minutes to ensure the center is cooked through.

 

Storage & Serving

  • Slice while hot! Delicious on its own OR served with some organic butter, nut butter, tahini, yoghurt and berries.

  • Store in an airtight container for roughly 2 weeks refrigerated. If you don’t think you will get through it all within that time, you can slice and freeze into portions.

  • When serving, toast in a toaster, or sandwhich press.
