Roasted Cashew Butter Slice

Gluten-free, Dairy-free, Raw, Vegan

 

Ingredients:

4 cups dry roasted cashews

1 cup coconut flakes

20 pitted medjool dates (If dry, let sit in water for 1/2 hour. Drain well & then use)

 

Toppings:

1/2 cup activated Buckwheat

3/4 coconut flakes

1cup golden berries (inca berries), chopped into halves

1/4 cup Chia seeds

*If you prefer other toppers, go for it! These are just what I had in my cupboard :)

 

Method:

  • Place cashews into a high speed blender/food processor and blend until cashew butter has formed (smooth or slightly grainy is fine).

  • Add dates and coconut and continue to blend until smooth & becomes stuck together (like a sticky dough ball).

  • Line a thin baking tray with baking paper. Remove mixture from blender/food processor and place onto baking paper. Use your hands or a rolling pin to flatten the mixture into roughly a 2cm thick slice (or thicker/thinner if you desire).

  • Sprinkle slice with chia seeds, then activated buckwheat, coconut flakes and then chopped golden berries.

  • Lightly press toppings down into slice to help them stick slightly.

  • Place slice into fridge and let "set" slightly harder. Remove after 1/2 hour and slice into desired sizes.

  • Store slices in an air-tight container in the fridge. Option to also freeze slices to store for longer. Or eat frozen for an even chewier treat!
