Pineapple & Peach Crumble
Gluten-free, Dairy-free, Refined Sugar-free, Vegan
Ingredients:
5 peaches, sliced through the middle & de-pipped
1/2-3/4 pineapple, skin cut off & sliced into pineapple rings (around 1.5cm high), cut the core of each ring out
Crumble:
2tbsp chia seeds
3tbsp rolled quinoa flakes
1/4 cup coconut flour
1/4 cup chopped almonds
1/4 cup whole almonds
* can use mixed nuts or other nut of choice
1/4 cup dessicated or shredded coconut
1tsp vanilla powder
1tsp cinnamon
2tbsp coconut nectar
1/4 cup coconut oil, liquid or melted
*Option: add 1/4 cup dried fruit or berry of choice e.g. goji berries, inca berries, chopped dates, raspberries (fresh or dried).
Method:

Pre-heat oven to 180 degrees celsius & line a baking tray with baking paper.

Place pineapple slices down & peach halves around the tray.

In a mixing bowl add all you dry ingredients (plus your dried fruit if using) and mix ingredients together until well combined.

Drizzle in your melted coconut oil & coconut nectar & mix through thoroughly.

Scoop heaped spoonfuls of the mixture into the middle of the pineapple rings & slightly smaller spoonfuls into the middles of the peaches.

Continue to fill each of the holes & scatter the rest of the mixture around the tray until all crumble is used.

Place in the oven and bake for 45 minutes until golden brown & the fruit juices are flowing! Depending on your oven, they may need a little more or less time.
Serving Suggestions!
Serve hot from the oven with a dollop of organic natural yoghurt or natural coconut yoghurt! Make sure to use a spatula under the baked pinapple to keep all of the crumble in place!
