The Healthiest Banana Bread!

Gluten-free, Dairy-free, Grain-free & NO added sweetener, *Vegan option

 

Ingredients:

4 large ripe bananas (ripe= lots of black spots)

1 cup almond meal

1 cup coconut flour

1/4 cup flaxseed/linseed meal 

1/4 cup cold-pressed coconut oil (option to use olive or macadamia oil)

3x whisked eggs

*Vegan option to use chia "egg"= 3tbsp ground chia seeds + 9tbsp water (whisk chia meal with water, let sit for 5 mins, whisk again, let sit for 10 mins)

1tsp cinnamon

1tsp vanilla powder

Topping:

1 large ripe banana, sliced lengthways

1/4 cup shredded/ dessicated or flaked coconut

 

Method:

  • Pre-heat oven to 165 degrees celsius. Line a small-medium loaf tin with baking paper.

  • In a mixing bowl, add all your dry ingredients (not the topping ingredients. Mix with a spoon until evenly distributed.

  • Add the banana's and eggs to your blender or food processor and blend until smooth. Add remaning ingredients and slowly mix until forms a moist dough consistency. *If you don't have a processor/blender, you can whisk the eggs & then mash the banana with a fork and whisk into egg mixture until smooth. Add your wet ingredients into your dry ingredietns & mix well until dough is formed.

  • Place banana bread "dough" into your lined baking tin & smooth down the top with a spatula or back of a spoon. 

  • Place your (topping) banana slices lengtheways on top of the banana bread (as seen in picture). Press banana halves down so they are level with the top of the banana bread. 

  • Sprinkle coconut to cover the rest of the banana bread surface and press down lightly to make it stick.

  • Place loaf tin in oven and bake for 1 hour. Depending on your oven, you may need slightly more or less time. You want the top to be golden brown.

  • The inside will still be moist & lovely!

I truly love this banana bread because it's actually literally BANANA bread. Unlike the store bought, sugar, white flour & flavour filled banana breads, my recipe is simple yet delicious and uses the sweetness and taste that the banana NATURALLY provides! With other simple, natural ingredients to compliment and enhance the nutritional goodness of this sweet loaf.

 

Serving options:

  • Nut butter or tahini! As simple as toasting a piece of banana bread and lathering one of the two on top!

  • Make your banana bread your breakfast! -->Toast a piece of banana bread, add 100g of natural yoghurt, some fresh or frozen berries, sprinkle with chia seeds, pepitas & sunflowrr seed or your favourite muesli mix & wallah! YUM!

  • Wrap up a piece to have by itself as a snack throughout the day. This will definately get you through that afternoon slump!

  • Double your protein hit & make your banana bread into french "banana bread". Just like french toast. Dip a piece of banana bread in a whisked egg mix & cook in a fry pan with a touch of coconut oil on medium heat! DELISH!
