Healthy Apple & Pear Crumble
Vegan, Gluten-free, Dairy-free, Refined Sugar-Free
Ingredients
(Serves 12- 1 fruit halve each)
3 pink or green apples (pink tend to be sweeter)
3 brown pears
Crumble:
1/4 cup shredded coconut
1/2 cup chopped almonds
1/3 cup gluten-free oats
1/4 cup rolled quinoa (or buckwheat or extra GF oats)
1/4 cup whole buckwheat
1/4 cup sunflower seeds (lightly dry toasted)
1/4 cup pepitas (lightly dry toasted)
2tbsp organic chia seeds
1/4 cup orgaic dried or fresh fruit (e.g. dried baby figs, goji berries, chopped fresh dates, sultanas, chopped fresh or dried apple etc)
2tbsp melted organic cold-pressed coconut oil
2tbsp organic maple syrup
Method

Pre=heat the oven to 180 degrees celsius. Line 1 large baking tray with baking paper.

Slice both the apple & pears lengthways. Slice or scoop out the cores of each. Can choose to leave the stems in tact.

Place the fruit on the baking paper, flat side down & bake for 20-25 mins, until they have softened slightly.

Remove tray from oven and turn all apples & pears over onto their rounded edges.

In a mixing bowl, add all the dry ingredients (except maple syrup & coconut oil) & combine until evenly mixed.

Add coconut oil & maple syrup, mix until mixture is evenly, lightly coated.

Spoon the mixture into the middle of the fruits (where their cores have been removed). Keep spooning until you have created a mound ontop of each half (as in photo).

If there is leftover mixture- scatter around the pears & apples to have as extra crumble or bake on a separate tray to save for later as granola.

Place fruit into oven for 20-30 mins until crumble is browned & nicely toasted and the fruit has warmed up again!
Serve with:

Natural yoghurt sprinkled with the extra crumble!

As in photo- I topped with Freezedried pomegrate for serving & a little bit of extra colour!
The beauty of this dessert is that if you don't finish it all, you can save it for breakfast, a snak or dessert the next day!
