Sweet Potato, Black Bean, Sesame Balls

Vegan, Gluten-Free, Dairy-Free, Refined Sugar-Free,

 

Ingredients

500g steamed sweet potato, puree'd or mashed

1 can black beans, well rinsed & well drained

3tbsp tahini, hulled or unhulled

2tbsp nutritional yeast

pinch pink himalayan rock salt

3/4 cup white sesame seeds (to roll balls in), may need more or less

 

Method

  • Pre-heat oven to 180 degrees celcius and line a baking tray with baking paper.

  • Measure 500g sweet potato, chop into rough chunks and steam until very soft. Puree sweet potato in a blender or mash with a fork or masher.

  • Place sweet potato into a bowl, add nutritional yeast, tahini and salt and mix together thoroughly.

  • Add black beans and stir through gently to ensure beans stay whole. Some may become slightly mashed when stirring.

  • Place white sesame seeds onto a plate ready to roll the balls in. Grab another empty plate to place rolled balls.

  • Scoop the mixture out into your hands using an ice cream scoop or regular spoon. Roll your first ball into the size you desire and place onto the empty plate.

  • Continue rolling the mixture into balls and placing onto the empty plate until all mixture is used. 

  • Wash and dry your hands as the mixture is sticky and will get stuck. 

  • Grab your sesame seed plate and baking tray. Roll each ball in sesame seeds to completely cover the outside and place balls onto baking tray ready for the oven.

  • Place baking tray into the oven and bake for 25-30 minutes until balls are warm and sesame seeds are slightly golden

 

Serving

  • Balls can also be eaten before being baked and will still taste delicious. Or placed in an air-tight container and warmed or baked at a later stage.

  • They can be taken as a snack with some guacamole, hummus or even nut butter for a bit of a sweet option.

Delicious served with:

  • a big stack of wilted greens, stir fried in coconut oil or ghee and lemon juice.

  • on top of a salad of baby kale, goats feta and toasted walnuts.

  • grain-free herbed tabouli with a side of hummus.

  • with a smear of babaganoush, beetroot dip, pesto or tomato salsa.

  • sitting on a mountain of zucchini noodles, stir fried with tomato sauce and topped with toasted seeds.

  • sitting on a mountain of vegetable mash

  • wrapped in some lettuce leaves with some roast veggies and other goodies inside.
