Gut Healing Zucchini Pikelets

Gluten-free, Dairy-free, Refined Sugar-free

Ingredients

2 eggs

1 small-medium grated zucchini

1tbsp teff flour

1tbsp organic Heal Your Gut powder by Lee Holmes

*see below if you don't have this powder

Pepitas (pumpkin seeds)- enough for sprinking on the top of the pikelets

A big dollop of hummus of choice

1 forkful of sauerkraut (My favourite range is Peace Love & Vegetables)

 

Method

  • In a small mixing bowl, crack your eggs and whisk with a fork. Add both teff and heal your gut powder, whisk again. Add grated zucchini and mix until all ingredients are well combined.

  • Heat a non-stick pan on medium heat. If your pan is good enough, you will not need oil. If not, add 1/2 tbsp coconut oil and melt. 

  • Use a regular spoon to scoop pikelet mixture into pan, making them the size you desire. If your pan is big enough, you should be able to cook mixture all at once.

  • Sprinkle pepitas on top of each pikelet, while the bottom of each pikelet is cooking. After roughly 3 minutes, flip each pikelet.

  • Cook on the other side for roughly 1-2 minutes.

  • Once they are ready, place all cooked pikelets onto a plate. Add a large dollop of hummus, a forkful of saurkraut and some cracked black pepper and you're ready to go!

 

Option: You can also make these pikelets sweet by adding 1/2 a mashed banana to the mixture of simply leaving the mixture as is and just topping your pikelet stack with nut butter and berries. Delicious either way!

 

Tip: If you don't have the Heal Your Gut powder, you can leave it out of substitute for another flour alternative such as; almond meal, extra teff flour, quinoa flour, tigernut flour, flaxseed meal, chia seeds, psyllium husks.
